Abstract (Englisch)

We aim to commercialize a plant-based milk alternative that has the same nutritional value, taste and texture as cow milk. This will be accomplished by a combination of upcycling, to reduce food waste, and AI-based ingredient selection, based on algorithmic screening of plant molecule databases.
