Hazelnut and chocolate spreads are breakfast staples, but often high in refined sugar and palm oil, which raises health and environmental concern. This project develops a reduced-sugar, palm-oil-free hazelnut spread with added fibre, similar mouthfeel and sweetness, and a better nutritional profile.
