A novel coupled co-extrusion / lamination processing technology will allow for puff-pastry like layering of a new class of optimized meat analogue (MA) bio-composite products with tailored sensory (aroma, taste and texture, AT&T) as well as nutritional (pulse protein and fiber rich) characteristics.
