Verschiedene Schlachtbetriebe haben in zunehmendem Masse Schlachtkörper mit zu hohem Anteil an intermuskulärem Fett und / oder zu fetten Brüsten festgestellt. Die Ursache dieser Mängel ist nicht klar. In einem Feldversuch werden mögliche Einflussfaktoren untersucht.

Several slaughterhouses increasingly confirmed a too high amount of intermuscular fat and / or bellies with a high amount of fatty tissue. The cause of this faults are not known. In a field trial possible effects are investigated.

Ziel des Versuches ist die Klärung des Einflusses der Genetik (Rasse) und der Haltung (Label und konventionell, Fütterungsintensität) auf den Anteil an intermuskulärem Fett (Schinken, Schulter) und den Fettanteil in der Brust.

Goal of the project is the evaluation of the genetic (breed) and management (label, conventional, feeding intensity) influence on the amount of intermuscular fat (ham, shoulder) and the amount of fat in the belly.

Die mit diesen Versuchen gewonnen Daten sind einmalig und sehr wertvoll., da in der Literatur bisher keine derartigen Versuchsdaten publiziert wurden.

The survey was executed in 1998 and 2000. The reference values of 1998 and 2000 were found to be within the margins of error, except for the cheese, which developed excellently and permits no conclusive predication. It is remarkable that products that accrue from animal- and milk production are more important than products which accrue from crop farming.
