Abstract (Englisch)

The project develops the ?MicroDrop? powder which encapsulates micronutrients with an inner fat core and an outer protein phase. The powder will tested in a drink application to reduce oxidation and deteriorating inter-nutrient reactions during storage which is a typical constraint in medical foods.
