Wer weniger Nahrungsmittel wegwirft und seine Ernährung optimiert, schont die Umwelt und berücksichtigt die Empfehlungen gemäss Lebensmittelpyramide besser als heute. Modellierungen der Forschungsanstalt Agroscope zeigen, dass die Umweltwirkungen unserer Ernährung um über 50 Prozent gegenüber der aktuellen Situation gesenkt werden können – und dies auch ohne ganz auf Fleisch zu verzichten. Allerdings werden die Anteile an Getreide, Kartoffeln, Früchten und Nüssen auf unseren Tellern grösser und weiterhin sollten wir auch Milch trinken.

Food and feed production, together with its preliminary stages – from the provision of the means of production, through to the growing and processing stages – is associated with significant environmental impacts. Opportunities for reducing these impacts exist at both the production and consumption stages, e.g. through changes in production technique and diet, respectively. As part of the ‘Green Economy’ strategy, the Federal Office for Agriculture (FOAG) deals with the challenges and potentials of resource-conserving food and feed production. Here, attention must be paid to the sustainable use of arable land and permanent grassland for food production. On behalf of the FOAG, Agroscope investigated how a diet for the Swiss population associated with the lowest possible environmental impacts might look.

En gaspillant moins de denrées alimentaires et en optimisant son alimentation, on peut à la fois préserver l’environnement et mieux tenir compte des recommandations nutritionnelles. Des modélisations de la station de recherche Agroscope montrent que les incidences de notre alimentation sur l’environnement pourraient être réduites de plus de 50 % par rapport à la situation actuelle – sans pour autant devoir renoncer totalement à consommer de la viande. La proportion de céréales, de pommes de terre, de fruits et de fruits à coque occuperaient une place plus importante dans nos assiettes et la consommation de lait se maintiendrait.

Chi getta via meno alimenti e ottimizza la sua alimentazione rispetta l'ambiente e tiene maggiormente conto delle raccomandazioni indicate nella piramide alimentare. Modellizzazioni della Stazione federale di ricerca Agroscope mostrano che è possibile diminuire gli effetti ambientali della nostra alimentazione di oltre il 50 per cento rispetto alla situazione attuale, senza neanche dovere rinunciare completamente alla carne. In compenso aumenteranno le quantità di cereali, patate, frutta e noci sui nostri piatti e continueremo a dovere bere anche latte.
