Abstract (Deutsch)

L#objectif final du projet est la diminution du risque sanitaire associé à la présence de bactéries pathogènes dans les fromages emmorgés au lait cru et thermisé par l#application prophylactique de deux cultures protectrices. Une culture ajoutée au lait de chaudière sera dédiée aux pathogènes présents dans le lait cru ou thermisé. Une culture d'affinage pour la protection de la surface sera également développée à partir de souches de Marinilactibacillus psychrotolerans.
