Abstract (German)

Novel nano carriers of three selected iron-complexes with chlorophyllin, proteins and lipids will be produced by a newly designed Ultra High Pressure Nano Dispersing device (UHP-Nano Disperser) as a major processing operation and incorporated into selected food product systems. This will support improved iron absorption kinetics control via GI tract with optimized iron bioavailability and avoidance of adverse effects on the microbiota
