Industrial implementation of surface micro-patterned chocolate

Switzerland has earned an international reputation for delicious chocolate. We propose to implement nano/micro patterns on chocolate to create colorful surfaces and new properties. This bio-inspired research, based on the wings of butterflies, has shown that surface colored chocolate can be produced without the addition of additives. We propose to demonstrate industrial readiness of our developed technique by studying the conditions and parameters necessary to implement and upscale the process.
