Lactases are widely used in the dairy industry to produce lactose-free milk. In PEARLs, we propose to|demonstrate the feasibility of a novel strategy to immobilize and protect a lactase enzyme at the surface of|an inert carrier material and to demonstrate its applicability to the degradation of lactose in milk. Compared to|the existing market solutions, the developed product is expected to have an enhanced activity and stability,|reusability and high purity.
