Abstract

Direct-fed microbials containing bacteriocinogenic intestinal strains, Bifidobacterium thermophilum RBL67 (thermophilicin B67) in combination with Pediococcus acidilactici UVA1 (pediocin PA1) will be developed aiming to inhibit Salmonella in poultry and swine for livestock production. The inhibitory activity of the 2 strains will be studied in vitro and in vivo. Antimicrobial mechanisms will be elucidated, with special focus on bacteriocins. A complete safety assessment of B. thermophilum RBL67 will be done for registration and commercial use of the new strain. Finally, state of the art fermentation, downstream processing and stabilization technologies for industrial production of active direct-fed microbials will be developed.
