This project has two ambitions: (i) Finalize the hardware development, as started in our previous project, of a food oil quality sensor for the Quick Service Restaurant (QSR) market that can measure the presence of polar compounds in the oil via changes in its dielectric constant. We will combine precise alimentary steel interdigitated electrode sensors with dedicated electronic circuits for read-out of the capacitance signal. (ii) Develop a user-friendly food safety operating system, called AssisTenceTM that is capable of detecting the signal from various Hazard Analysis and Critical Control Points (HACCP), including our food oil sensor.
