Abstract

Probiotics are live microbial supplements that benefit to the health of consumers by maintaining or improving their intestinal microbial balance. Technologies enhancing viability of probiotics are needed to support development of in functional foods and supplements. This project aims to develop a new technology with immobilized cells and continuous fermentation for the efficient production of stress-adapted probiotics. Genomic is used to understand the physiological effects of immobilization and culture time and to expend the application to a range of bacteria and products. Stress-adapted probiotics will also be tested in selected functional food models.
