Acrylamide is used widely in the chemical, scientific and construction industries and is now also recognized as being present in foods that have been prepared at higher temperatures. It is well documented that acrylamide exposure of adult humans and laboratory animals produces neurotoxicity characterized by ataxia and skeletal muscle weakness. However, with regard to the developing nervous system, the neurological, functional and cellular consequences of acrylamide exposure have not been described. In the present research project it will be investigated whether low-level intoxication with acrylamide produces neurodevelopmental toxicity by interfering with developmentally important cysteine-containing proteins.
